What is couverture . real chocolate ?
what is fake chocolate?
There are two types of chocolate, one is couverture chocolate, another one is compound chocolate. The so called fake chocolate we often hear is actually called compound chocolate.
Couverture chocolate is made from natural cocoa butter from cocoa beans. Because couverture chocolate uses natural cocoa butter, it has a richer flavor and smoother texture.
In contrast, compound chocolate is a cheaper alternative chocolate that removed the cocoa butter from cacao bean, and replaced it with other type of fat such as processed vegetable oi or palm oil. The replaced oil often undergoes hydrogenation and fractionation, to achieve solidification to replace natural cocoa butter.
